I’ve been following Caroline Franco since I’ve been working hard at the Meditterean Diet. She made this dressing with zaatar, this amazing Middle Eastern spice made of dried thyme, oregano, marjoram, sumac, toasted sesame seeds, and salt. Have you tried it? It’s incredible!
I modified her recipe a bit to fit my preferences (I like more lemon and different vinegars). Give it a shot!

1/4 cup olive oil

1 tbs zaatar spice

1 tbs white balsamic vinegar

1 lemon, juiced

1 small garlic clove. pressed/minced

1 tbs honey
-
1/4 teaspoon each salt and pepper

3 tbs tahini
Place ingredients in a glass mason jar. Put the lid on and shake! Serve it over roasted vegetables. It’s divine!
