I’ve been following Caroline Franco since I’ve been working hard at the Meditterean Diet. She made this dressing with zaatar, this amazing Middle Eastern spice made of  dried thyme, oregano, marjoram, sumac, toasted sesame seeds, and salt. Have you tried it? It’s incredible!

I modified her recipe a bit to fit my preferences (I like more lemon and different vinegars). Give it a try!

Place ingredients in a glass mason jar. Put the lid on and shake! Serve it over roasted vegetables. It’s divine!
