Now that the new year has begun, I’m ready to reset and get back to my rolled oats breakfast routine. I still have some blueberries in the freezer that I picked at the Happy Berry last summer. If you’re local to upstate SC you should give them a try. They have so may varieties, both sweet and tart, so mixed together they taste amazing.

Overnight oats are the easiest breakfast to prep in advance, so you literally can grab and go. And, in my opinion, you can never go wrong with blueberry! To make them you’ll need:

Place a saucepan on medium-high heat and add the frozen blueberries. As they begin to thaw after 3-4 minutes mash some of them up. Remove from heat and let them cool slightly while you prepare the other ingredients.

Combine the cashew butter, syrup, flaxseeds, pecans and cinnamon in a bowl and stir until combined.

Now for the fun part! Grab your mason jar and start layering. Add about half the blueberries to the bottom of the jar then add the oat mixture. Add the yogurt then the remaining blueberries. Put the lid on and let it sit overnight in the refrigerator.

The next morning when you’re ready to eat, gently stir the mixture and add a few toppings like shredded coconut and more pecans and enjoy!

This quick and easy overnight oats recipe is inexpensive and so yummy!

Ingredients
