I was in the mood for a green salad with plenty of

I was in the mood for a green salad with plenty of proteins and herbs and voila! I love how it turned out and will be making it again soon. To make it you’ll need:
1 cup asparagus - chopped
3/4 cup frozen edamame
3/4 cup frozen baby lima beans
1/2 cup rainbow quinoa
a bunch of dill
a bunch of mint leaves
2 spring onions

For the dressing:
3 tbsp extra virgin olive oil
the juice of 1 lime
1 tsp maple syrup
1 tsp dijon mustard
salt and pepper to taste

Cook the quinoa according to the packet’s instructions.

Add a drizzle of olive oil to a pan. Add in the asparagus, stir, cover with a lid and cook for 5 minutes. Add in the frozen edamame and lima beans, put the lid back on and cook for 5 more minutes.

To make the dressing add all the ingredients into a jar and shake well.
Add all the ingredients for the salad in a large bowl. Drizzle the dressing and enjoy!

Simmering this earthy, herbal chicken broth today

Simmering this earthy, herbal chicken broth today for a little gut and immune support. There’s nothing like sipping on a warm nourishing broth full of herbal medicine, especially when you aren’t feeling your best.

Today’s broth includes chicken legs, reishi mushroom slices, a head of garlic, leeks, lemon slices, carrots, celery, fresh sage, rosemary, thyme and oregano, jalapeno, astragalus root, calendula and peppercorns.

Cover with water and simmer 6-8 hours. This allows the hot water to extract the benefits from all that goodness.

This broth is so healing and soothing, and is a wonderful way to support your immune system during times of stress.

Before serving, I season the broth with freshly squeezed lemon juice, and salt + pepper to taste.

I have a wish list of all the things I want to accomplish. I have to admit I get a bit overwhelmed sometimes.

I’m learning to simply make progress. Today I can do a little bit better.

For example, I really am trying to do better at meal prep and include my son in the process. I would make a recipe he asked for then nothing for the next week!

So I told him it’s his responsibility to text me on Wednesdays with 2 recipes. I’ll make one on Saturday and one on wed. Routines are so helpful for me!
